Ingredients:
3 ripe bananas
2 eggs
1/3 cup melted coconut oil
1/2 cup coconut sugar
1 tsp vanilla extract
1 1/2 cups gluten-free flour blend (1-1 replacement if available)
1 tsp baking powder

1/4 tsp salt
1/2 cup chopped walnuts (options)
Instructions:
Preheat your oven to 350 and line a 9x5 inch loaf pan with parchment paper.
In a large bowl, mash the bananas with a fork. Add the eggs, coconut oil, coconut sugar, and vanilla extract, and whisk until well combined.
In a separate bowl, mix together the gluten-free flour blend, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to over mix, or your bread will be tough.
If you're using walnuts, fold them into the batter.
Pour the batter into the prepared loaf pan and smooth the top with a spatula.
