Corn Salad

2 (15 oz) cans of Del Monte corn – drained (Can use frozen corn thawed out or corn on the cob)

1 cup Finely chopped green pepper

½ cup Finely chopped red onion

2 cups grated cheddar cheese

1 cup Hellman’s mayonaise

1 (10 ½ oz) bag Fritos ‘Chili Cheese’ corn chips

Combine all ingredients, except the corn chips

Chill at least 6 hours

Add corn chips, slightly crunched up, just before serving
