Butterscotch Ice Cream

8 T Butter

12 T Dark brown sugar

2 c Half & Half

20 oz Whipping cream

4 Eggs

2/3 c Sugar

2 t Vanilla

Pinch of Salt

Melt brown sugar & butter on med-low heat. Increase heat until the mixture bubbles. Stir until the brown sugar just begins to caramelize (about 15 min). Add half & half and stir continuously until well blended.

Beat together eggs, sugar, salt and vanilla. Add the shipping cream. Mix on high speed.

Mix everything together. Place into ice cream maker and follow the manufacture’s instruction. Refrigerate 6 + hours.

After ice cream is made you may swirl in some butterscotch sauce if you desire.
