Caramel Macadamia Nut Ice Cream

2 Eggs

1/2 t Salt

2 c Whipping Cream

1 c Half & Half

1/2 c Macadamia Nuts, salted & chopped

1 t Vanilla

2/3 c Sugar

6-7 oz Caramel Sauce

Mix eggs, salt, sugar and vanilla in a mixer. Mix well. Add whipping cream and half & half. Divide nuts and prepared caramel --- use one half of each for each batch of ice cream.

Prepare ice cream according to the manufactures instructions. Add nuts the last five minutes. Remove ice cream from maker --- stir in the caramel, and refrigerate for at least 6 hours.

You can use any prepared caramel or you can make your own. Use a thick Caramel --- otherwise it runs to the bottom while in the freezer.
