Chocolate Chip Mint Ice Cream

2 Eggs

2 c Whipping Cream

1 c Half & Half Cream

½ c Sugar

¼ c Corn Syrup

1 t Vanilla Extract

½ c Chocolate Chips

1 ½ t Mint extract

Green Food Coloring – 5 drops

Beat eggs until light, about 4 min.; beat in sugar, corn syrup, creams and vanilla, mint extract and food coloring. Pour 1 ½ + cups into ice cream maker for 25 to 30 min. While this is mixing, chop ½ c. of cold chocolate chips. Add ½ of this to the ice cream machine the last five min. of making. Repeat – with remaining liquid and the remaining ½ of the chips. This makes about 3 ½ c. total. Placed finished produce in air tight container and place in the freezer.

For an Adult version replace extract & coloring with 1/3 c. Crème de menthe.
